Chole Bhature Veg Recipes of India

Chole Bhature is a popular North Indian dish that is loved by everyone. It is a combination of spicy and tangy chickpeas curry (chole) and deep-fried fluffy bread (bhature). This dish is perfect for breakfast, lunch, or dinner and is enjoyed with a side of onion and pickle.

To make Chole, the following ingredients are required:

  • Chickpeas (chhole) - 1 cup
  • Onion - 1 large (finely chopped)
  • Tomato - 2 medium (finely chopped)

  • Garlic - 4-5 cloves (finely chopped)
  • Green chilies - 2-3 (finely chopped)
  • Coriander powder - 2 tsp
  • Cumin powder - 2 tsp
  • Red chili powder - 1 tsp
  • Turmeric powder - 1 tsp
  • Amchur (dry mango powder) - 1 tsp
  • Garam masala powder - 1 tsp
  • Oil - 2 tbsp
  • Salt to taste

To make Bhature, the following ingredients are required:

  • All-purpose flour (maida) - 2 cups
  • Semolina (suji) - 2 tbsp
  • Yogurt - 2 tbsp
  • Salt - 1 tsp
  • Sugar - 1 tsp
  • Baking powder - 1/2 tsp
  • Baking soda - 1/4 tsp
  • Oil - 2 tbsp
  • Water - as required

Preparation:

For Chole:

  1. Soak chickpeas overnight or for at least 6-8 hours in water.
  2. Drain the water and rinse the chickpeas properly.
  3. Heat oil in a pressure cooker and add cumin seeds.
  4. When the cumin seeds start to splutter, add chopped onion, ginger, garlic, and green chilies.
  5. Saute until the onion turns golden brown.
  6. Add chopped tomatoes and cook until the tomatoes are soft and mushy.
  7. Add all the dry spices and saute for a minute.
  8. Add the soaked chickpeas and mix well.
  9. Add 3-4 cups of water and pressure cook until the chickpeas are soft and tender.
  10. Once done, garnish with fresh coriander leaves.

For Bhature:

  1. In a mixing bowl, add all-purpose flour, semolina, salt, sugar, baking powder, and baking soda.
  2. Mix all the ingredients well.
  3. Add yogurt and oil and mix it again.
  4. Add water gradually and knead it into a smooth and soft dough.
  5. Cover the dough with a damp cloth and keep it aside for 2-3 hours.
  6. After 2-3 hours, divide the dough into small balls and roll them into a round shape.
  7. Heat oil in a deep frying pan and fry the bhature until they are puffed and golden brown.
  8. Remove from oil and serve hot.
